The Story

My name is Carol Scudere and in 2009 I formed Budget Meals, a non-profit organization, which provides educational classes to teach a system I developed for myself and others. This process has enabled me to save up to 60-percent off my groceries on almost every shipping trip. Today, we are suffering through the worst economy in over eighty years, for which there is no end in sight. At first I felt compelled to help a certain demographic in the management of their households: those families who face a radical loss of income due to a job loss; or the replacement of a well-paying job with one where the ends no longer meet. But along the way, I decided this book could help anyone who wished to stretch their food dollar and the stress of preparing meals. It is for families that I founded Budget Meals, Inc., a non-profit organization based in Ohio and dedicated to teaching others through local classes on how to budget, plan menus, cook, shop, and 'made do with less.' Through this education, local food pantries as well as state and federal agencies can become less strained as families learn to improve their self-sufficiency. Budget Meals takes to heart the ancient proverb, 'Give a man a fish and you feed him for a day. Teach a man to fish and you feed him for a lifetime.' Teaching families these life skills through Budget Meals' classes is highly rewarding for all involved. However, teaching through classes will always be limited in its reach. I realized that the lessons Budget Meals teaches and the knowledge that I have acquired in a lifetime of helping others could reach a greater number of people if the lessons were available in book form. That is why I have written and published this book. May it reach all those who have the need of these life skills and those who wish to teach the lessons of this book to families in need. This book, and the classes offered by Budget Meals, were designed to help families so that they could provide more food for their families at the lowest possible costs. The methods described in this book came about from years of research and practice to help prevent hunger in families. My goal was to be able to feed a family of four (4) for approximately $300 a month, with food that is well-balanced nutritionally as well as tasty and enjoyable. When I provide costs/prices in this book, remember that they are for the area t hat I am currently residing (Columbus, OH), and based on sale prices for the food I purchased during the year 2011. Your own area and shopping habits might influence the price it would cost you to prepare similar foods. However, if you are willing to change some of your shopping habits, you should also be able to achieve similar savings. I hope you enjoy this book and that my system and tips are as beneficial for you as it has been for me throughout the years. These days some of us just need a 'helping hand not a hand out'.
